America's food monopolies have huge farms so when an outbreak of bird flu happens, millions of birds are culled. This is why eggs are scarce.

Yes, and that's like 75% of the explanation... smaller farms. smaller coops. less outdoor roaming due to this thing they call "Winter" and more safety precautions to avoid contact with migrating birds in their outdoor areas, and more hands on care of the birds so an illness can be sited right away.
