There's been a few efforts to get Half-Life: Alyx playable without VR and the latest is HLA-NoVR, out now and it's now possible to play it through, even on Steam Deck too.

From your experience playing it both ways, for someone who loved HL, HL2, and the episodes but never bought into VR, is it worth playing this way?

this is not worth it at all. Without significant changes to the scale and gameplay loop, this game will not work at all. It's mostly because it is designed from ground up for vr without any compromises. In flat screen this game will repulse player due to smaller scale, tedious scavenging for resources and fragility of Alyx. But it is working in vr. Honestly, that way of experiencing this game will only buther it without mercy.
