So my process begins with cranking the medium burner to full and putting the pan on it.

I then make the dough, knead it, cut and roll out. By then the pan is good and hot, and off I go. 😀

My dough is just flour, salt, a drizzle of olive oil and enough water to form a pliable, but not sticky dough.
