Did you know that #Germans have a LOT of #superstitions about #bread?

In the olden days, when bread was baked at home, bad luck would seep into the bread when one cursed while baking.

And if the loaf would be placed over the table's edge, sickness would soon enter the house.

A loaf placed upside down would sway, because the poor souls would try to turn it, & if the head of the house cut the bread crookedly, then he had just lied...

Got back into making my own bread. Pretty easy, bread tastes better than anything at the store, and it makes the whole house smell great!

I make bread but am terrible at cutting it; all my slices end up wonky.

I suspected that if you cool it in the fridge first, it's waaaaaaay easier to cut and manage. πŸ˜„

Experiment loaf!

I made this like you’d make croissant dough, but instead of butter, I made a praline mix and used that. Then let it proof as a loaf and baked as normal.

Smells fantastic.

Haven’t baked in two weeks due to being away. So baked today as I’m out of bread.

No discernible difference in texture. Tasty, but the cheese is not noticeable. Should have used more. # #


New # just out the oven. Nutmeg, date and Grana Padano cheese, for something different.

I managed to forget to turn the oven down (usually pre-heat to 220Β°C then turn down to 185Β°C after the initial steam blast for 44mins), so this one baked for 22mins at 220Β°C and 9 mins at 180Β°C. When it cools, I’ll see how that changed (or didn’t) the texture.

Vanilla, cinnamon & mace spices with toasted almonds, dayes, apricots and figs.

New # just out of the oven. I made the dough yesterday but ran out of time to bake it, so it spent overnight in the fridge. This should in turn improve the flavour from the show ferment.

New # I braided this one this time and made a less enriched dough. Seems to have worked out ok. # # #


Today’s part rye # contains dates, apricots, figs and pistacchio nuts. It is spiced with cinnamon, mace, star anise and allspice.

Since I’m back in the office tomorrow and Tuesday, I baked today. Yet another # with rye, treacle, spices and the usual fruit mix of pecans, dates and apricots.

New # just out of the oven. Plain white wheat flour this time, golden syrup and Christmas pudding spices with a hint of star aniseed. # # #

Almond, date and apricot with spekulaas spices and additional butter.

New experimental #fruitLoaf This one is 50% rye flour and 50% plain wheat flour.
I went for standard A Grade cinnamon, some mace and Allspice, with almonds, dates and apricots.
