Between the first rise and proofing, you stretch out, arrange chopped dates and almonds across the entire length, then roll in to a loaf and leave to proof.
It's VERY coffee forward in flavour. Oh, I added 50g of sugar which I forgot to mention. You might want a more dilute coffee, or more sugar. Depends on what you're aiming for.
