460g plain flour
5g active dry yeast
9g salt
111g milk
161g water
40g egg
40g sugar
20g butter
about 2g spices (I used cinnamon, all spice and ginger - but you can use whatever you like)

Mix and knead.

Rise - 2-4hrs
Form in to a rectangle, 1cm thick
arrange dried fruit and nuts of your choice over the entire rectangle.
Roll up and place in a greased bread tin.
Pre-heat oven to 220ยบC. When risen, put bread in oven, spray oven with water and decrease to 185ยบC. Bake 44min.

Turn around about half way through. It is done when the core temperature of the loaf is around 90ยบC.
