Is it not more to the point that we need integrity in our food system and not necessarily more science.

Well, I mean, if people can see the latest about all the recalls, the listeria, the e coli, the salmonella, the botulism, the 6 months without baby formula, not to mention the bird flu, and think we don’t need regulations & inspections, I don’t see a lot of hope.

I can´t find the article now, which I read a few years ago. Cheese-making in The Netherlands goes back to 12th C.. The two most well-known types still popular worldwide.
Also popular in the UK. Till the middle-men in The Rotterdam harbors started to fool around with it. Adding oil, lard etc to it. It was discovered around 1890. Causing an immediate stop on import.
Danish cheese had been improving meanwhile, taking over the trade.
Trust in Dutch cheese never recovered really in the UK.
