I baked some more peanut biscuits, 'cause they were so tasty last time.

Ingredients

* 125g Butter
* 80g castor sugar
* 80g brown sugar
* 1 egg (large)
* 240g Self Raising Flour
* 1/2 to 3/4 teaspoon dutch cinnamon
* 1 teaspoon vanilla extract
* 150g whole shelled peanuts

Method

Cream butter and sugar.
Add egg, cinnamon and vanilla, whisk well.
Add flour. Mix until combined.
Add peanuts, mix in.

Place heaped teaspoon balls of dough on greased trays.

Press lightly with a fork.

Bake at 180ยบC for 10-12mins or until brown.

Cool slightly on trays before moving to a wire rack.

Store, when completely cool, in an airtight container.

Yum. They were one of Mumโ€™s staples and one of our favourites. Havenโ€™t had homemade ones for years. Now Iโ€™m dreaming about them. ๐Ÿ™‚
